New resarch from the University of California has found that adequate copper in the diet plays a key role in metabolising fat by breaking down adipose (fat) tissue, using it for energy.

The study found that mice with a genetic mutation causing a build-up of copper in the liver had lower levels of body fat than mice without the mutation.

It also found that cattle reared on a copper-rich feed produced leaner meat than those that were not. The researchers recommend boosting copper intake by consuming – shellfish, leafy greens, beans, seeds, nuts and mushrooms.
